Scorpion fish with Fried Broccoli and Ginger Recipe

A scorpion fish is a group of predatory, marine fish that are found amongst coral reefs and in shallow waters in the more temperate oceans. The scorpion fish is most closely related to the lionfish and is most commonly found in the Indian and South Pacific oceans. It provides quite nice nutrients as a delicacy.
Cook time 20 minutes and 1 hour for marinating (serves 3)
Ingredients for the recipe
4 scorpion fish fillets with skin
2 tablespoon fish sauce
2 green chillies
4 sticks lemon grass
1 leek
500g broccoli
4 tablespoon peanut oil
4 tablespoon oyster sauce
1 tablespoon grated root ginger
Procedure for the recipe
  • Dry the fish fillets and cut into 2 cm strips. Marinate in the fish sauce and chillies sliced into rings for 1 hour. Cut the lemon grass into 5cm sticks. Cut the leek into rings. Rinse the broccoli, break up into florets, peel the stalk and cut into slices.
  • Heat half of the peanut oil and gently fry the broccoli florets and slices with the lemon grass. Then add the leek rings, pour in the oyster sauce. Towards the end, toss in the grated ginger. Remove and keep warm.
  • Heat the remaining peanut oil and put in the fish chunks. Carefully fry on both sides over a medium heat, for 5 mins. Arrange the broccoli and leek on plates and serve one fried fish fillet on each plate.
