Whole Grain Rice with Salmon and Spicy Bean Sauce Recipe


Grains, especially whole grains, are an essential part of a healthy diet. All types of grains are good sources of complex carbohydrates and some key vitamins and minerals. Grains are also naturally low in fat. All of this makes grains a healthy option. Better yet, they've been linked to a lower risk of heart disease, diabetes, certain cancers and other health problems. The healthiest kinds of grains are whole grains. The 2010 Dietary Guidelines for Americans recommends that at least half of all the grains you eat are whole grains. Cook time 30 minutes and 10 minutes marinating (serves 5)
Ingredients for the recipe
300g whole-grain rice
400g salmon fillet
2 tablespoon spicy bean sauce
200g cherry tomatoes
4 tablespoon vegetable oil
½ bunch coriander
Procedure for the recipe
  • Cook the whole-grain rice according to the instruction on the package and set aside.
  • Dry the salmon and cut into 3cm chunks, then marinate for 10 mins in the spicy bean sauce. Rinse, dry and halve the cherry tomatoes.
  • Heat the oil, briefly stir-fry the salmon chunks; add the halved tomatoes, the fish sauce and the cooked rice. Turn carefully and fry until the salmon is tender.
  • Rinse and shake dry the coriander and pluck off the leaves. Sprinkle over the rice just before serving.
