Fried Egg Noodles with Shrimps and Snow Peas Recipe


As with other seafood, shrimps have high calcium, iodine and protein but low in food energy. A shrimp-based meal is also a significant source of cholesterol, from 122mg to 251mg per 100g of shrimp, depending on the method of preparation. Shrimp consumption, however, is considered healthy for the circulatory system because the lack of significant levels of saturated fat in shrimp means that the high cholesterol content in shrimp actually improves the ratio of LDL to HDL cholesterol and lowers triglycerides. This makes them very important once in a while in the diet. Try them in this recipe to see the delicacy for yourself.
Cook time is 35 minutes (serves 3)
Ingredients for the recipe
250g Chinese egg noodles
300g snow peas
1 bunch spring onions
2 small, mild green chillies
2 tablespoon sesame oil
250g cocktail shrimps
2 tablespoon light soy sauce
2 tablespoon sweet and sour chilli sauce
6 eggs
Salt
Procedure for the recipe
  • Cook the egg noodles according to the instruction on the package. Top and tail the snow peas, rinse, dry and half diagonally. Rinse and trim the spring onions and cut into thin, diagonal rings. Rinse and dry the chillies and cut into fine strips.
  • Heat the sesame oil and stir fry the spring onions. Add first the snow peas, then the chilli strips. Towards the end, toss in the egg noodles and fry for 3 mins.
  •  Add the shrimps and season with the soy and chilli sauce. Push the noodle mixture up towards the rim of the cooking pot and pour the whisked eggs into the centre. Leave to settle a bit, then stir and mix with the fried noodles. Serve.
