Pineapples are rich in vitamins B-complex a group of
vitamins like folates, thiamin, pyridoxine
and riboflavin.It also contains minerals like copper, manganese
and potassium. Pineapple fruit also contains a proteolytic enzyme bromelain that digests food by
breaking down proteins. It is also an excellent source of antioxidant vitamin;
vitamin C. This makes
pineapples to be an important fruit in a diet. Test this combination in this
recipe.
Cook time is 20 minutes (serves 3)
Ingredients for the recipe
2 lobsters
½ pineapple
4 tablespoon vegetable oil
1 tablespoon palm sugar
1 tablespoon tamarind sauce
2 tablespoon oyster sauce
4 tablespoon fish sauce
2 tins coconut milk (400ml each)
5 kaffir lime leaves
Procedure for the recipe
- Cut open the lobster, remove the innards and pound the claws. Peel the pineapple and cut into bite-sized chunks.
- Stir-fry the lobster pieces over very high heat; add the pineapple and sprinkle with finely chopped palm sugar, then pour the tamarind, fish and oyster sauces over. Add the coconut milk and leave to simmer for 5 mins.
- Towards the end, stir in the finely chopped kaffir lime leaves. Serve.
