Scorpion Fish with Baby Sweet Corn, Snow Peas and Mint Recipe


A scorpion fish is a group of predatory, marine fish that are found amongst coral reefs and in shallow waters in the more temperate oceans. The scorpion fish is most closely related to the lionfish and is most commonly found in the Indian and South Pacific oceans. It provides quite nice nutrients as a delicacy.
Cook time is 15 minutes and 30 minutes for marinating (serves 3)
Ingredients for the recipe
4 scorpion fish fillets
3 tablespoon fish sauce
200g snow peas
200g baby sweet corn
2 carrots
6 tablespoon vegetable oil
1 tablespoon shrimp paste
3 tablespoon oyster sauce
1 teaspoon sambal oelek
5 sprigs mint
Procedure for the recipe
  • Cut the scorpion fish into 3cm chunks and marinate for 30mins in the fish sauce, leaving the skin on.
  • Dry the snow peas and baby sweet corn and halve diagonally. Rinse, trim, peel and halve the carrots and cut into strips.
  • Heat 4 tablespoons oil and stir-fry the vegetable, add the shrimp paste, oyster sauce and sambal oelek and pour in 200ml water. Remove.
  • Stir-fry the fish in the remaining oil, then return the vegetables and carefully stir. Towards the end, sprinkle with plucked mint leaves.
