Squid with Garlic and Green Peppercorns Recipe


Cook time is 25 minutes (serves 3)
Ingredients for the recipe
1 kg squid flesh (not the tentacles and head)
1 whole garlic bulb
4 tablespoon vegetable oil
4 tablespoon fish sauce
2 tablespoon green peppercorns
2 tablespoon roasted sesame oil
Procedure for the recipe
  • Thoroughly rinse the squid under running water and dry well. Crush the garlic cloves in their skins.
  • Slice open the squid tubes lengthwise and spread out on the work surface, the outside facing down. Make fine rhombus-shaped incisions with the tip of a knife, then cut the squid into chunks of 5cm.
  • Heat the sesame and vegetable oil and fry the crushed garlic cloves. Add the squid chunks, pour in the fish sauce, add the peppercorns and briefly fry. Serve.
