Fried Prawns with Soy Sauce and Lemon Grass Recipe


Cook time is 15 minutes and 2 hours for marinating (Serves 3)
Ingredients for the recipe
20 fresh whole prawns
½ bunch coriander
1 small garlic clove
1 stick lemon grass
1 thumb sized knob root ginger
½ tea spoon curry powder
5 tablespoon peanut oil
2 tablespoon soy sauce
50ml water or fish sauce
Procedure for the recipe
  • Rinse the prawns under running water and dry on kitchen paper. Place into a porcelain dish. Rinse and shake dry the coriander and pluck off the leaves.
  •  Peel and finely chop the garlic, cut the lemon grass into rings, peel and grate the root ginger. In a bowl whisk together with curry, 3 tablespoon peanut oil and soy sauce and then pour over the prawns.
  • Cover with cling film and leave to marinate in the fridge for 2 hours.
  •  Remove the prawns from the marinade, heat the remaining peanut oil and stir-fry the prawns on both sides for 2 mins.
  • Towards the end, pour in the marinade and fish stock or water and stir. Serve garnished with coarsely chopped coriander leaves.
